zucchini bread



I have personally tried a bunch of zucchini bread recipes.....mine is never the same twice.....well, not anymore!!!!! I have hit on THE.BEST zucchini bread recipe EVVVER!! My neighbor made it last summer and shared it with us...I've had a craving for it the past week or so....and she just emailed me the recipe a few days ago. My dear friend Ms.T brought me a fresh zuccini from her lovely garden yesterday morning and I got busy!! I've decided it's the cinnamon that makes this bread so yummy. So get yourself a zuke and let's get started......

WHOLE WHEAT ZUCCHINI BREAD

2 c. sugar
1 c. vegetable oil
3 eggs, beaten (3 "Egg Beaters")
2 zucchini, unpeeled & grated
3 tsp. vanilla
3 c. whole wheat flour
1 tsp. salt
1 tsp. soda
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. chopped nuts

Mix sugar, oil, eggs, zucchini and vanilla in large bowl. Sift together in separate bowl whole wheat flour, salt, soda, cinnamon and baking powder. Add dry ingredients to first bowl, stirring to combine well. Add chopped nuts. Bake at 350 degrees for 45 to 60 minutes. Yield: 2 loaves.

I didn't have any whole wheat flour.....so I used the regular stuff.....I am telling you...you won't be dissappointed. We are entering full blown zucchini season....be sure to check back for some other terrific zucchini recipes in the coming weeks.

I can't wait to try this one. I think it'll seem almost healthy with zucchini AND whole wheat!

gonna try it!! That is, once the dang deer stop EATING our zucchini leaves off of the plant so the veggie can actually GROW!

Ok, bought some zucchini from a farmer's market this weekend.....I am typically make a zucchini bread recipe that the boys LLOOOOOVVVEEE and I add some chocolate chips in the batter, along with sprinkling some on top. I like this recipe since it is just one step healthier with the whole wheat flour, which I usually use these days. Gonna try it now with my addition of chocolate chips!! Yummy Yum!
