Zucchini Quiche
This a quick and easy recipe my neighbor shared with me a few years ago.....and since I've started on a zucchini roll over here I thought I'd share it with you! I love it too, because you always have these ingredients on hand, so it doesn't take a trip to the store to put it together.
PreHeat oven to 375 degrees
4 cups Zucchini- cut in small pieces
6 eggs
3/4 cup oil
3 C. Bisquick
1/4 C. grated Parmesan cheese
3/4 C. Cheddar cheese
chopped fresh parsley
1 large onion- chopped
salt and pepper
Mix all ingredients. Spray baking dish with cooking spray. Pour into baking dish. Bake 50-60 minutes or until golden brown.

mmmm and I must try that bean salad for family supper this sunday! I love z's but my hubby can sniff one a mile away and turns up his nose...more for me! can you believe how great farmers markets are?
