zucchini soup
This soup is soooo.sooooooo.soo GOOD!!!!!!! I got it from my dear friend Marzipanmom. She even won a prize with it last week in a zucchini cookoff!!! I have been craving it and this is the first batch of the season. I truly hope you make it and you will see how great it is too!!!
Ingredients:
2lbs. hot or sweet italian sausage
1 medium onion- chopped
4 cloves garlic- minced
1 green pepper- chopped
1 red pepper- chopped
2 zucchini- chopped
2 qts. canned tomatoes
1 32oz. carton tomato soup
1 tsp. cumin
1 tsp. pepper
1 tsp. salt
1 tablespoon oregano
3 or 4 basil leaves- chopped
1 Tbsp. parsley
1 Tbsp. sugar
pinch of baking soda
8oz. mini bowtie pasta
Brown sausage and drain. Set aside. Saute onions 3 minutes. Add garlic and cook another minute. Add peppers and cook until soft. Add cumin, pepper, oregano, basil, salt, sugar, baking soda and parsley. Then add tomatoes, soup, pasta and sausage. Simmer 2-3 hours. Add water or chicken stock if needed

I'm so flattered! By the way, I was looking at the instructions when I submitted the recipe for the cook-off and it omits the zucchini. You can either add it when you are sauteeing the peppers or add it along with the tomatoes and soup. You really should try it with a little provolone on top. Let it melt a minute - it's really good!

Thanks for coming by and it is nice to put a face with a name. I know I need to gete a picture up on my blog but you know how moms never have pictures because they are the ones taking the pictures and add to that my hubby has been in school and is studying for a final so I feel bad asking him to stop for a picture. One of these days I will get one on there.
